Egg mayonnaise – Blackacre eggs cooked for 6 ½ minutes to get the perfect egg. Then chopped by hand & turned in mayonnaise, finished with a twist of cracked black pepper and watercress, creating a very moreish sandwich.

History of afternoon tea

Afternoon tea was first introduced in England by Anna, the seventh duchess of Bedford in the year 1840. The duchess would become very hungry around 4 o’clock in the afternoon. The evening meal in her household was fashionably late at eight o’clock, thus leaving a long period between lunch and dinner. The duchess asked for a tray of tea, bread and butter and cake to be brought to her room during the late afternoon. This became a habit of hers and she began inviting friends to join her.

This pause for tea became a fashionable social event during the 1880s. Upper class and society women would change into long gowns, gloves and hats for their afternoon tea which was usually served in the drawing room between four and five o’clock.

A little about Birchall, our tea supplier

The story starts with Captain Birchall George Graham who was posted to India as an officer with the duke of wellingtons regiment. On returning to England after his tour and 18 years of service he sold his commission. In 1872 he decided to return to India, joining his brother Robert Fuller Graham, and used his savings to make a living by planting tea in Darjeeling.

Over 140 years after Birchall Graham began planting tea in Darjeeling, his family continue the unbroken tea tradition he started. The company based is based in London and has extensive interests in East Africa, including trading offices and a 62,000 sq/ft tea factory in Mombasa, Kenya and the Pfunda tea Estate in Rwanda.

Birchall tea is sourced exclusively from estates across east Africa. This equatorial altitude, high rainfall and rich volcanic soil provide the ideal conditions that are integral to growing tea of unparalleled flavour and taste.
